WELCOME TO MY KETO WORLD

Food has always been an important part of my life. While other kids at school had crackers and chips in their lunchboxes; I had olives, salami and cheese with pesto in mine. When I was 8, I used to ask my mom to buy me ingredients for a Milanese Risotto. Later when I was 16 and while I was still in high school, I started working Tuesday and Thursday nights as an intern in Haute cuisine restaurants to start gaining experience in the culinary industry. After high school, I was lucky enough to study in the United States, and graduated Summa Cum Laude with a Bachelor of Science in Food Sciences, Baking and Pastry Arts from Johnson and Wales University in Providence, Rhode Island.

In the past 16 years of my life, I have worked full time in professional kitchens, from luxury and gourmet restaurants and hotels to traditional pastry shops and food processing plants. For the past 4 years, I’ve been working on my own production plant for my artisanal Donut business.

Frequently, we, who work in the food industry, end up being the ones who have the worst eating habits. After working all day in a kitchen, the last thing you think about is coming home to another kitchen to cook a meal for yourself. This was me during my first year living in the United States; I gained 55 pounds and experienced first-hand what it is to eat pretty much anything that crossed my path.

Almost 3 years ago, I wanted to lose weight fast. When it comes to weight loss most of us want a magic pill. We want a miracle diet and immediate results, without experiencing any pain in the process. It was while looking for that perfect diet, that I found Keto. After doing a little research and finding out that I could lose weight quickly, and still eat cheese and bacon, I jumped head-first into the low-carb, moderate protein, high-fat world.

Yes, I ended up losing weight fast, and have been very happy in the process… But I have also learned during this time, that losing weight is only one of the hundreds of benefits that this lifestyle has brought me. I have also learned that to make it a sustainable lifestyle, I must eat other foods aside from unlimited amounts of cheese; and that in fact, there are right approaches and others that may not be so sustainable.

Today, in addition to controlling my weight, this lifestyle provides me with sustained energy throughout the day, enhances my productivity, and provides me with mental clarity that I had not experienced before. This lifestyle has also allowed me to identify food intolerances that had been affecting my health without knowing. Pretty good, right?

In the past years of my life, I have regained control over my health through food; And even though I don’t want to spend hours in the kitchen after a long day at work, I know it is on me to prioritize my eating habits. In this book you will find easy and quick recipes, designed to help you follow a day to day Keto Diet.
